For as long as I can remember I have had a high tolerance for pain. However, I am also starting to notice that it's not only pain I'm less sensitive to, but also physical touch in general. Sometimes I don't feel anything at all when someone touches me, it's like I'm observing someone else and it's not me that they are touching. Is this also dissociating? Can someone relate?

Sounds like numbing, which is part of the Flight response I think. It could also be part of dissociation, I'm not too good on all the terminology. My body used to go numb when people touched me, so yes, I can relate.

In my experience, anytime I feel as if I am observing it is dissociation.  When I realize I do this I work on grounding.  I try to use my 5 senses.  My therapist says I have 5 fingers one for each sense.
